The 14 EU allergens restaurants must declare
Under EU Regulation (EU) No 1169/2011 on food information to consumers, food businesses — including restaurants serving non-prepacked food — must make information on 14 listed allergens available to customers.
The 14 allergens
- Cereals containing gluten — wheat, rye, barley, oats and their hybrids
- Crustaceans
- Eggs
- Fish
- Peanuts
- Soybeans
- Milk — including lactose
- Nuts — almonds, hazelnuts, walnuts, cashews, pecans, Brazil nuts, pistachios, macadamia
- Celery
- Mustard
- Sesame seeds
- Sulphur dioxide and sulphites — at concentrations above 10 mg/kg or 10 mg/litre
- Lupin
- Molluscs
The list covers products made from these ingredients too. Exact obligations (for example whether information is written or verbal, and how it is displayed) are set by each member state, so check your national authority. This page is general information, not legal advice.

Tools that help show allergens on digital menus
See our allergens & compliance and QR & digital menus categories, or the QR menu comparison. A tool can help display information, but the operator remains responsible for its accuracy.
